Learned the fundamentals of Japanese cuisine from iron chef, Tosio Katsumata in Tokyo.
Joe met Masa-san in Vancouver Canada in 1992. He then started working at Masa-san's restaurant "Bon". Afterwards, he accepted the position as head chef at Vancouver's Pan Pacific, a Japanese restaurant in a 5 star hotel. At the same time, he coordinated in-flight Japanese meal service for Air Canada. Joe was designated the chairman in Seattle of NPO association, "Cultural Exchange of Japanese Cuisine" by the famous chef, Mr. Hirohisa Koyama.
